Ingredients

  • 2 large eggs
  • 1/4 cup Sombrero salsa
  • 1/4 cup shredded cheddar cheese
  • Chopped Spinach
  • Salt and pepper to taste)

Combine eggs and salt and pepper in small bowl.  Spray an omelet pan or small skillet with cooking spray and heat over medium. Add egg mixture to pan and cook until edges start to set. Gently lift edges with spatula and let uncooked egg mixture run underneath.

Cook until eggs are set. Sprinkle cheese, chopped spinach, and ½ of Sombrero salsa on one side of eggs. Fold over, let cheese melt. Top with remaining Sombrero salsa and serve.
